Madame Hien Restaurant, Vietnam as seen from France

In Hanoi's Old Quarter, Didier Corlou manages Madame Hien restaurant with virtuosity, in homage to Vietnamese women and their ancestral culinary savoir-faire.

Behind the deep golden yellow facade of the establishment, the famous French chef Didier Corlou uses his impressive talent to perfume the streets of Hanoi with his cooking of traditional dishes of Vietnam. Past the entrance portico, you walk into a sober, charming room, enhanced by its colonial heritage. You can dine on the terrace or inside and choose from among the menus proposed or the dishes à la carte.

Away from the hustle and bustle of the capital, the restaurant invites you to indulge in a gourmet excursion in a relaxing atmosphere. Sweet and sour in the south and more rustic in the north, Vietnamese cuisine is very diverse and its cooking has technical characteristics all its own. From caramelized pork meatballs, to green papaya salad with dried beef, and lamb braised with citrus fruit, this is the quintessence of the country's gastronomy, prepared by an excellent French chef.
